12-Hour Crocked Chili
- 1 lb Fat-trimmed lean beef stew
- -meat in 1/2-inch cubes
- 1 cn (6-oz) tomato paste
- 2 Onions; finely chopped
- 2 Bell peppers; seeded and
- -diced
- 1 -(up to)
- 2 Cloves garlic; minced
- 3 -(up to)
- 4 ts Chili powder (or combine 1
- -minced small hot pepper; 2
- -teaspoons cumin seed or 1
- -teaspoon ground cumin; and
- -1 teaspoon dried oregano)
- 1 ts Plain cocoa powder; optional

Stir meat and tomato paste together in crockery cooker. Stir in other
ingredients (add no water or other liquid). Turn cooker to low heat; cover
and cook for 12 hours. Skim, and discard any fat from the surface. Makes
4 servings, 240 calories each.
