7-Grain Oatmeal Cake
- - CREAM TOGETHER:
- 1 c AM Canola Oil
- 2 c Maple syrup
- 1 1/2 ts Vanilla
- - MIX TILL SMOOTH:
- 2 c AM Unbleached White Flour
- 3/8 c AM Soy Flour
- 1/2 c Cold water
- 1/2 c Soy milk
- 1 1/2 ts Grated lemon rind
- 1 1/2 ts Sea salt (optional)
- 3 Egg whites
- 2 ts Cinnamon
- 2 ts Non-alum baking powder
- - MIX THE ABOVE 2 MIXTURES
- - TOGETHER AND ADD:
- 1 c Cooked AM 7 Grain Cereal
- 5 c AM rolled Oats
- 1/2 c Raisins (optional)
- 1/2 c Chopped nuts
Mix well and fill oiled cake pan 3/4 full. Bake 350 F. until light golden
brown. This is not a very sweet cake. May be served with apple butter,
honey, etc.
