Alexis Smith's Corn Pudding
- 2 c Canned whole kernel corn;
- -drained
- 4 oz Can green chili peppers;
- -drained/cubed
- 1/4 lb Cheddar cheese; grated
- 1 c Milk
- 1/2 ts Salt
- 3 Eggs; beaten
Mix ingredients in the order given. Turn into a greased 11/2 qt. baking
dish and set in a shallow pan of hot water. Bake in preheated 350° oven for
about 1 hour, or until set. Serve hot or cold. Great with barbecued chicken
