Alligator Meatballs
- 1 lb Alligator meat; chop
- 1 Egg
- 1 tb Onion; chop fine
- 2 tb Celery; chop fine
- 1 tb Parsley; chop fine
- 2 tb Shallots; chop fine
- 2 ts Lemon pepper
- 1/2 ts Salt
- 1/4 c Bread crumbs
- Flour to dredge
- 1 c Cooking oil
Mix all ingredients, form into 1" balls. Allow to set for 1 hour. Dredge
with flour and fry until brown. Serve hot. Source: Louisiana Seafood & Wild
