Alligator Meatballs

  • 1 lb Alligator meat; chop
  • 1 Egg
  • 1 tb Onion; chop fine
  • 2 tb Celery; chop fine
  • 1 tb Parsley; chop fine
  • 2 tb Shallots; chop fine
  • 2 ts Lemon pepper
  • 1/2 ts Salt
  • 1/4 c Bread crumbs
  • Flour to dredge
  • 1 c Cooking oil
Mix all ingredients, form into 1" balls. Allow to set for 1 hour. Dredge
with flour and fry until brown. Serve hot. Source: Louisiana Seafood & Wild
