Apple and Oat Bran Muffins
- 1 1/4 c Whole Wheat Flour
- 1/3 c Packed Brown Sugar
- 1/4 ts Baking Soda
- 1/4 ts Ground Nutmeg
- 1 c Buttermilk
- 2 tb Cooking Oil
- 1 c Oat Bran
- 2 1/2 ts Baking Powder
- 1/4 ts Salt
- 1/4 ts Cinnamon
- 2 x Egg Whites
- 3/4 c Shredded, peeled Apple
In a med bowl stir together flour, oat bran, brown sugar, baking powder,
baking soda, salt, nutmeg, and cinnamon. Set aside.
In a small bowl combine buttermilk, egg whites, and oil, Add to dry
ingredients; stir just till moistened. Stir in shredded apple. Store
batter, tightly covered, in the refrigerator for up to 5 days.
To bake, spray muffin cups with non-stick spray coating. Spoon about 1/4
cup batter into each muffin cup. Bake in a 375 deg F oven for 18-20
minutes or till a toothpick inserted near the center comes out clean.
Makes 12 muffins.
