Apple Cake 2
- 3 c Sliced apples; (6 to 8)
- 2 1/4 c Sugar
- 1 tb Cinnamon
- 3 c Flour
- 3 ts Baking powder
- 1 ts Salt
- 1 c Less 2 tbs.oil
- 4 Eggs
- 1/4 c Orange juice
- 1 tb Vanilla; ----topping-----
- 1 tb Brown sugar
- 1/2 c Chopped nuts
- 1 ts Cinnamon
Preheat oven to 375 deg.Combine apples,1/4 cup sugar and cinnamon,and set
aside.In a large bowl combine flour,remaining sugar,baking powder and
salt.Make a well in center of mixture and pour in oil,juice,eggs and
vanilla.Blend well.Spoon 1/3 of batter into greased and floured 10" tube
pan.Arrange 1 1/2 cups of the apples in a ring on the batter.Repeat with
layers of batter,apple and batter.Cover with topping swirling it in a
bit..Bake 1 hour at 375 deg.and an additional 10 minutes at 350 deg. or til
cake tests done..
