Apricot Oatmeal Bars
- -------------------------------CRUMB MIXTURE-------------------------------
- 1 1/4 c All-purpose flour
- 1 1/4 c Quick-cooking oats
- 1/2 c Sugar
- 3/4 c Butter; melted
- 1/2 ts Baking soda
- 1/4 ts Salt
- 2 ts Vanilla
----------------------------------FILLING----------------------------------
1 10-oz jar (3/4 cup) apricot
-preserves
1/2 c Flaked coconut
Heat oven to 350 degrees. In large mixer bowl comine all crumb mixture
ingredients. Beat at low speed until crumbly. RESERVE 1 CUP CRUMB MIXTURE;
press remaining crumb mixture on bottom of greased 13x9-inch baking pan.
Spread apricot preserves to within 1/2-inch from edge of crumb mixture;
sprinkle with reserved crumb mixture and coconut. Bake for 22 to 27 minutes
or until edges are lightly browned. Cool completely; cut into bars.
