Asparagus Vinagrette Salad
- 1 ts Sugar
- 1/8 ts Cayenne pepper
- 1 ds Garlic juice
- 1 c Olive or salad oil
- 2 tb Chopped parsley
- 2 cn 15 oz. whole asparagus,drain
- 1 1/2 ts Salt
- 1/4 ts Paprika
- 1/3 c Tarragon vinegar
- 1/4 c Chopped shallots or onions
- 2 tb Chopped pimento
- 1 tb Capers
Combine sugar, salt, cayenne pepper, paprika, and garlic juice in a bowl.
Add vinegar and oil slowly, beating constantly. Add onions or shallots,
parsley, pimento, and capers. Mix well. Pour over asparagus and refrigerate
overnite.
