Asparagus Vinagrette Salad

  • 1 ts Sugar
  • 1/8 ts Cayenne pepper
  • 1 ds Garlic juice
  • 1 c Olive or salad oil
  • 2 tb Chopped parsley
  • 2 cn 15 oz. whole asparagus,drain
  • 1 1/2 ts Salt
  • 1/4 ts Paprika
  • 1/3 c Tarragon vinegar
  • 1/4 c Chopped shallots or onions
  • 2 tb Chopped pimento
  • 1 tb Capers
Combine sugar, salt, cayenne pepper, paprika, and garlic juice in a bowl.
Add vinegar and oil slowly, beating constantly. Add onions or shallots,
parsley, pimento, and capers. Mix well. Pour over asparagus and refrigerate
overnite.
