Baked Fish (Psito Psari)
- MARY SUE DAY
- 1 Whole grouper -- about 3 lbs
- 3/4 c Olive oil
- Juice of 2 lemons
- 1 Lemon -- sliced
- 3 lg Onions -- finely chopped
- 20 ml Garlic -- finely chopped
- 1/2 c -water
- Salt & pepper to taste
- STUFFING-----
- 1/2 ts Parsley -- chopped
- 1/2 ts Oregano.

Clean fish & slit down center. Sprinkle inside w/lemon juice. Salt & pepper
and let stand 20 min. Drain & place in baking dish & stuff w/parsley &
oregano. Saute onions & garlic lightly 3 min. in olive oil. Pour over fish.
Arrange sliced lemon on top of fish, add water & bake in oven 375F. for 45
~ 50 min. or until fish is tender. Baste occasionally w/pan juice.
