Black Bean and Sausage Posole

  • 12 oz Ground turkey sausage
  • 1 cn Reduced-sodium chicken
  • -broth; (14.5 oz.)
  • 1 cn Black beans; (15 oz.) rinsed
  • -and drained
  • 1 cn Golden hominy; (14.5 ounce)
  • -rinsed and drained
  • 1 cn Mexican-style stewed
  • -tomatoes; (14.5 ounce) NOT
  • -drained
  • 1 c Frozen loose-pack diced hash
  • -browns
  • 1/2 c Sweet green peppers; chopped
  • 1/3 c Onion; chopped
  • 1 Clove garlic; minced
  • 1/2 ts Chili powder
  • 1 ts Dried oregano; crushed
In large saucepan, brown sausage. Add green pepper, onion, garlic and cook
until tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili
powder and oregano. Bring to boiling; reduce heat. Cover and simmer 30
minutes.

Serves 6.

NOTES : Made 11-6-97. Added 1/2 tsp. more chili powder and 1 green chili,
chopped. Used Jimmy Dean pork sausage.
