Black Bean and Sausage Posole
- 12 oz Ground turkey sausage
- 1 cn Reduced-sodium chicken
- -broth; (14.5 oz.)
- 1 cn Black beans; (15 oz.) rinsed
- -and drained
- 1 cn Golden hominy; (14.5 ounce)
- -rinsed and drained
- 1 cn Mexican-style stewed
- -tomatoes; (14.5 ounce) NOT
- -drained
- 1 c Frozen loose-pack diced hash
- -browns
- 1/2 c Sweet green peppers; chopped
- 1/3 c Onion; chopped
- 1 Clove garlic; minced
- 1/2 ts Chili powder
- 1 ts Dried oregano; crushed
In large saucepan, brown sausage. Add green pepper, onion, garlic and cook
until tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili
powder and oregano. Bring to boiling; reduce heat. Cover and simmer 30
minutes.
Serves 6.
NOTES : Made 11-6-97. Added 1/2 tsp. more chili powder and 1 green chili,
chopped. Used Jimmy Dean pork sausage.
