Breaded Cutlets

  • 1 Egg
  • 1 tb Water
  • 2 ts Minced chives
  • 1/4 c Flour
  • 1 c Soft bread crumbs
  • Lemon wedges (optional)
  • 2 tb Dijon style mustard
  • 6 sl Cooked turkey, chicken or
  • Roast beef or pork roast.
  • Cooking oil
Cut meat slices 1/4" thick. Beat egg, mustard, water and chives
together. Dredge meat slices in flour, dip in egg mixture, coat with
crumbs. Fry meat slices in 1/4" hot cooking oil in skillet until golden on
both sides, turning once. Add more oil, if needed. Serve with lemon
wedges.
