Cajun Boudin Sausage
- 2 lb Ground beef
- 2 lb Ground pork
- 4 c Cooked rice
- 4 lg Onions; minced
- 10 Cloves garlic, minced (up to
- -25)
- 6 sm Hot Chile Peppers, (Serrano,
- -Etc); minced
- 2 Stalks celery,minced
- 1 lg Sweet red pepper; minced
- 1 lg Sweet green pepper; minced
- 2 md Leeks; minced
- 6 Green onions; minced
- 1 c Minced parsley
- 1/3 c Minced cilantro
- 1 ts Red pepper flakes
- 1 ts Black pepper
- 2 tb Sugar
- 1/4 ts Thyme
- 1/4 ts Sage
- 1/4 ts Rosemary
- 1/4 ts Savory
Mix thoroughly. Stuff into casings.
