Catfish Parmesan

  • 2/3 c Parmesan cheese; Grated
  • 1/4 c All-purpose flour
  • 1/2 ts Salt
  • 1/4 ts Ground black pepper
  • 1 ts Paprika
  • 1/4 c Milk
  • 5 Catfish fillets; About 2
  • -pounds (up to 6)
  • 1 Egg; Beaten
  • 1/4 c Butter; Melted
1. Combine the Parmesan cheese, flour, salt, pepper and paprika in a medium
sized bowl.

2. Combine the egg and milk in separate bowl, stirring well.

3. Dip fillets in egg mixture then dredge in flour mixture.

4. Arrange coated fillets in a lightly greased 13 x 9 x2-inch baking dish.

5. Drizzle fillets with melted butter.

6. Bake at 350 degrees for 35 to 40 minutes, or until fish flakes easily
when tested with a fork.
