Chicken Adobo
- 4 5 oz chicken breasts halves
- -skinned and boneless
- 2 lg Crushed cloves of garlic
- 1 md Onion, chopped
- 1/2 c Rice vinegar
- 1/4 c Low sodium soy sauce
- 2 Bay leaves
- 1/4 c Water
- 1 ts Sugar
- 1/8 ts Fresh black pepper, ground
1. Rinse chicken pieces and place in large pot. Add all other remaining
ingredients, and pour over chicken to cover. Cover the pot and simmer
for 1 hour or until the chicken is very tender. Remove the bay leaves
and serve with a small amount of marinade.
Serves: 4 (3 oz. pieces of chicken each)
