Crabby Potatoes
- 1 1/2 lb Red New Potatoes
- 1/4 lb Crab Meat
- 2 tb Chives -- minced
- 1 tb Parsley -- chopped
- 1 ts Olive Oil
- 2 tb Nonfat Mayonnaise
- 2 tb Nonfat Yogurt
- 2 ts Lemon Juice
- 3 tb Parmesan Cheese
Bake potatoes in a 350 degree oven until tender (30-45 min). Let cool. Cut
into quarters.
In a bowl, combine all other ingredients. Stir in potatoes. Place into a
shallow baking dish.
Broil 4" from heat until golden. Serve hot.
