Fried Shrimp with Pineapple
- 1 c Sifted flour
- 1 ts Baking powder
- 1 ts Salt
- 1 Egg, beaten
- 1/2 c Beer
- Oil for frying
- 1 lb Shrimp, peeled and deveined
- 1 tb Cornstarch
- 1 tb Sugar
- 1/4 c Vinegar
- 1/2 c Pineapple juice
- 1 c Pineapple chunks
1) Sift flour, baking powder, and 1/2 ts salt together in a bowl. Beat in
egg and beer.
2) Heat oil to 375 degrees in deep skillet or deep fryer. Dip shrimp in
batter, coating well. Fry shrimp, a few at a time, until golden brown.
Drain on paper towels and keep warm.
3)In saucepan, combine cornstarch, sugar, 1/2 ts salt, and vinegar. Add
pineapple juice, cook over low heat, stirring constantly, until sauce
thickens.
4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp.
Pour sauce on top; serve at once.
