Green Mango Salad with Cilantro Vinaigrette

  • 1 lb Mango; unripe (green)
  • 1 c Bean sprouts
  • 1 md Carrot; peeled and grated
  • 3 tb Lemon juice
  • 1 tb Low sodium soy sauce
  • 1 Clove garlic; minced
  • 1 ts Granulated sugar
  • 1 tb Chopped fresh cilantro
Peel, seed and grate mango. In a medium bowl, combine mango, bean sprouts,
and grated carrot.

Mix remaining ingredients in a small bowl and combine with mango mixture.

Per serving: 76.9 calories; 0.3 g fat (3% calories from fat); 1.7 g
protein; 19.3 g carbohydrate; 0 mg cholesterol; 162 mg sodium
