Herby Cheese and Rice
- 1 c White rice
- 2 tb Olive oil
- 3 tb Fresh basil; parsley, or
- -mix of the two or 1T dried
- -herbs
- 1 1/2 c Mozzarella; grated
- 2 tb Parmesan; grated
Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir
mozzarella into hot rice--it must melt. Sprinkle parmesan over top and
serve immediately.
