Herby Cheese and Rice

  • 1 c White rice
  • 2 tb Olive oil
  • 3 tb Fresh basil; parsley, or
  • -mix of the two or 1T dried
  • -herbs
  • 1 1/2 c Mozzarella; grated
  • 2 tb Parmesan; grated
Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir
mozzarella into hot rice--it must melt. Sprinkle parmesan over top and
serve immediately.
