Jack Cheese Fondue

  • 2 c Milk
  • 2 c Dry white wine
  • 2 oz Butter
  • 1/4 c Flour or Butter roux
  • 3 tb Corn starch
  • 1/2 tb Worcestershire sauce
  • 1/2 tb Tabasco sauce
  • 1/2 tb Black pepper
  • 1/2 tb Celery salt
  • 1 1/2 lb Sonoma Hot Pepper Jack
  • 1 lb Sonoma Garlic Jack
  • 2 oz Sonoma cheddar
Bring milk to a boil; add flour. Stir constantly. Add wine and corn starch,
stirring constantly. Add remaining ingredients. Keep heat low; cook just
til cheese melts.
