Kaffir Lime Leaf, Black Eye And Aduki Bean Croquettes
- 4 1/2 oz Black eyed beans; cooked
- 6 Kaffir lime leaves
- 1 1 in piece lemon grass
- 4 1/2 oz Aduki beans; cooked
- 1 1 in piece root ginger;
- -chopped
- 1 Red chilies; (1 to 2)
- Groundnut oil for frying
1. In a food processor combine all the ingredients and blend until a rich
paste has developed.
2. Form small medallions from the paste.
3. Heat the oil in a large frying pan and shallow fry the croquettes for
3-4 minutes.

interesting balance of flavours.
