Kaffir Lime-Peanut Sauce
- 1 1/2 c Roasted peanuts
- 1/4 c Fried shallots
- 2 Garlic cloves
- 5 Thai bird chiles
- 1 tb Minced galangal
- 1 tb Sugar
- 1 ts Kosher salt
- 2 Limes; juiced
- 4 Kaffir lime leaves
- 1/4 c Sweet soy sauce
- 2 c Water
In a food processor, combine all. Add water. Check for seasoning. Cook
slowly, about 30 minutes, until sauce consistency is achieved.
