Pine Nut Pancakes (Low-Fat)
- 1 1/2 c Reduced-fat biscuit/baking
- -mix
- 1 c Puffed rice cersal
- 1/3 c Finely chopped banana
- 1/2 c Shredded peeled apple
- 1 3/8 c Raisins
- 2 tb Pine nuts; toasted
- 1 lg Egg
- 3/4 c Skim milk
- 1/2 ts Vanilla
In a bowl, combine bakinf mix, cereal, banana, aoole, raisins and pine
nuts. In another bowl, beat egg, milk and vanilla; stir into dry
ingredients just unti moistened. Pour batter by 1/4 cupfuls onto a lightly
greased hot griddle; turn when bubbles form on top of pancakes. Cook until
second side is golden brown. Serve immediately. Yield
: 10 pancakes. Serving size- 2 pancakes.
