Rum Mincemeat Muffins
- 1 1/2 c Flour
- 1/4 c Sugar
- 2 tb Baking powder
- pn Salt
- 1/2 c Butter
- 1/2 c Apple juice
- 2 Beaten eggs
- 1 c Mincemeat
- 1/2 c Dark rum
- 12 Sugar cubes
Mix dry ingredients in a bowl & set aside. Melt butter in a saucepan
& add apple juice & beaten eggs. Stir the liquid into the dry
ingredients, then add mincemeat. When just mixed, spoon into well
greased muffin tins filling only about 2/3 full. Soak sugar cubes in
rum & place 1 cube on top of each muffin. Bake for 20 minutes in 375
oven. Serve warm.
