Tabbouleh
- 1 c Cracked wheat; soaked for 10
- ; minutes in cold
- ; water
- 2 lg Ripe tomatoes; seeded,
- -skinned and
- ; diced
- 1 sm Cucumber; diced
- 3 Spring onions; finely sliced
- 1 lg Hand flat leaf parsley;
- -chopped
- 1 lg Hand mint; chopped
- One lemon; juice of
- 1 tb Olive oil
- Salt
- Freshly ground black pepper
Drain the wheat through a sieve and then squeeze out the wheat in your hand
to get rid of any excess water.
Place the wheat in a bowl with all the rest of the ingredients and combine
them using your hands. Dribble with a little more olive oil if needed and
season with salt and pepper.
