  • 1 c Cracked wheat; soaked for 10
  • ; minutes in cold
  • ; water
  • 2 lg Ripe tomatoes; seeded,
  • -skinned and
  • ; diced
  • 1 sm Cucumber; diced
  • 3 Spring onions; finely sliced
  • 1 lg Hand flat leaf parsley;
  • -chopped
  • 1 lg Hand mint; chopped
  • One lemon; juice of
  • 1 tb Olive oil
  • Salt
  • Freshly ground black pepper
Drain the wheat through a sieve and then squeeze out the wheat in your hand
to get rid of any excess water.

Place the wheat in a bowl with all the rest of the ingredients and combine
them using your hands. Dribble with a little more olive oil if needed and
season with salt and pepper.
