Vegetable Skillet Souffle
- 1 tb Butter
- 4 Eggs; beaten
- 1/4 c Milk
- 1 tb Instant minced onion
- 1/2 ts Garlic salt
- 1/4 ts Peppe
- 1 c Broccoli; asparagus or
- -spinach, cooked & chopped
- 1 c Pitted ripe olives; sliced
- 1/2 c Grated Parmesan cheese
Place butter in 9 inch pie plate. Microwave at high (100%) until melted, 30
seconds. In a large mixing bowl combine eggs, milk, onion, salt and pepper.
Stir in vegetables, olives and 1/4 cup Parmesan cheese. Pour into pie
plate. Cover with plastic wrap. Microwave at medium (50%) until center is
set, 8 to 10 minutes. Sprinkle remaining cheese on top. Microwave,
uncovered, at medium high (70%) 1 minute. Makes 6 servings.
