Watermelon Lime Cooler

  • 3 c Watermelon; chopped and
  • -seeded
  • 4 c Water
  • 3/4 c Granulated sugar
  • 3/4 c Freshly squeezed lime juice;
  • -or more to taste
  • Mint sprigs; for garnish
  • Fresh ginger root; for
  • -garnish
Puree the watermelon with half the water, then strain, pressing hard on the
pulp.

Boil the remaining water and sugar until dissolved, about 5 minutes. Allow
to cool, then stir all of the ingredients in a pitcher. Pour into tall
glasses filled with ice, and garnish with the mint and ginger.
