Watermelon Lime Cooler
- 3 c Watermelon; chopped and
- -seeded
- 4 c Water
- 3/4 c Granulated sugar
- 3/4 c Freshly squeezed lime juice;
- -or more to taste
- Mint sprigs; for garnish
- Fresh ginger root; for
- -garnish
Puree the watermelon with half the water, then strain, pressing hard on the
pulp.
Boil the remaining water and sugar until dissolved, about 5 minutes. Allow
to cool, then stir all of the ingredients in a pitcher. Pour into tall
glasses filled with ice, and garnish with the mint and ginger.
