West Indian Shrimp
- 1 1/2 lb Shrimp, cooked -- drained
- And peeled
- 2 tb Olive oil
- 1 tb Angostura bitters
- 1 ts Dried chervil
- 1/2 ts Marjoram
- 1/2 ts Thyme
- 1/2 ts Cumin seed
- 1/4 ts Saffron
- 1/2 c Grated Parmesan cheese
In an oven-safe skillet, heat olive oil until it smokes. Quickly saute
shrimp. Stir in bitters and herbs. Sprinkle with Parmesan cheese and broil
until lightly browned.
