White Bean and Red Pepper Spread

  • 16 oz White beans; 1 1/2 cups
  • -cooked
  • 1/3 c Red peppers; roasted
  • 1 Clove garlic; minced
  • 2 tb Fresh lemon juice; up to 3
  • 2 tb Fresh parsley; chopped
  • Salt and pepper to taste
1. Combine beans, red pepper, garlic and lemon juice in a food processor.

2. Blend until smooth.

3. Stir in parsley, salt and pepper.

Variations: Use roasted garlic. Substitute basil or dill for parsley.
