Winter Fruit Compote
- 1 c Chicken broth -- (College
- Inn)
- 16 oz Peaches, sliced -- drained
- 3 tb Sugar, light brown
- 20 oz Pineapple chunks -- drained
- 2 tb Lemon juice
- 17 oz Cherries, dark sweet pitted
- 1 ts Cornstarch
- Drained
- 1/4 ts Allspice -- ground
- 6 oz Apricots -- dried
In 3-quart oven-proof casserole, stir together broth, brown sugar, lemon
juice, cornstarch and allspice; add fruits, stirring well. Cover; bake at
350 degree for 45 minutes, stirring occasionally. Serve warm as a side dish
with poultry or pork or as a dessert.
