Zama De Pasole Verde (Green String Bean Soup)

  • 2 lb String beans, cut
  • 3 lb Spring chicken, cut up
  • 2 tb Lard
  • Onion,large,chop & saute
  • 1 ts Red pepper
  • Garlic clove
  • 1 c Onion, small, minced
  • Parsley, and dill,chop fine
  • 1 1/2 tb Flour
  • 3 qt Water
Place lard, onion and flour in a pot, saute, add red pepper, water,
chicken and cook. Cook cut up green beans, garlic, and onion in 4 ounces
water separately for a half hour, then add to chicken pot and cook for 45
min or more. Add parsley and dill last.
